The Kyriako Bar

When travelling around the islands filming the show, we can often be too busy to find the time for lunch. So in order to keep the energy levels up, chef Kyriako came up with a healthy, long-lasting and delicious snack we can carry in our backpacks and munch on as we go. We of course named it The Kyriako Bar!

Ingredients

  • 150g cranberries, goji berries & dates (each)
  • 150g pistachios, cashews, almonds, ground not powdered
  • 150g oats
  • 150g coconut oil
  • 150g honey
  • 150g almond butter
  • 50g Maka powder
  • 50g hemp seeds
  • 50g pumpkin seeds
  • 50g sunflower seeds
  • 1 shredded apple (without skin)
  • Half teaspoon of cinnamon
  • 2 tablespoon of orange juice
  • 2 tablespoons of desiccated coconut

Ingredients correspond to a 25cm X 40cm baking tray.

Method

Heat all the wet ingredients (almond butter, honey and coconut oil) at a low temperature .

Add all ingredients to the above mixture, except for the grated apple and sunflower seeds. Mix well together.

Lastly add the grated apple and mix.

Lay the mixture flat on a tray covered with non stick paper.

Sprinkle the sunflower seeds on top at the end.

Bake for 20 min at 160 degrees Celcius. We don’t want it to cook, but to dry and become firm.

Let it cool and then turn it over and cut into small bars.

Tip: You can store the bars in the cupboard for a week or in the fridge for several weeks
