Recipe – Fakes (Lentil Soup)

Despite its small size, the island of Lefkada produces a huge amount of lentils. They’ve been growing them for centuries and sending their produce across the Mediterranean for others to enjoy. One of the best dishes you can make with them is Fakes. It’s a healthy soup that’s packed with flavour!

Ingredients

1 kilo lentils
1 kilo passata (crushed tomato sauce)
5 pieces of garlic
1 chopped onion
1 carrot
3 bay leaves
1tsp sugar
Salt & pepper
Olive oil

Method

First, rinse the lentils in water, as they might have some rocks in them. Large lentils might need to be soaked in water for a few hours before we start, and it is usually recommended for better results.

Place lentils in a pot, adding just enough water to cover them well. Bring to boil for 2 to 3 minutes and then drain the water.

Place lentils in the pot with about 4 cups of fresh water, the onion, garlic, bay leaves, salt and pepper. Add the passata and mix until well blended.

Simmer for about 30 minutes or until soft and thick (Can take up to an hour)

Serve with a spoonful of olive oil and a drizzle of red wine vinegar, add salt as needed.

Recommended you accompany with feta cheese, olives or cured fish.
